A native of the Republic of Georgia, Maia moved to New York City in 2007 and opened Oda House to acclaim from Vogue and the New York Times. Now, at Oda House's New Jersey location, she continues to bring Georgian cuisine to stateside palates, using natural ingredients and traditional recipes to entice new fans. Seared, organic, grass-fed lamb and grilled eggplant mingle in the clay pot dish known as chanakhi, and smoked pork belly accompanies pan-roasted corn bread on a plate of mchadi lorit. The menu caters to special diets, featuring many gluten-free and vegan options.
