Old School Bagel Cafe’s bakers arrive at 3 a.m. each morning to begin crafting fresh dough for the day’s array of New York–style rounds, which accompany steaming mugs of joe and bookend the fillings for specialty sandwiches. The bagel purists boil, rather than steam, each O before baking it in the oven. A quick glance of laser vision slices each bagel, halving it before a staffer slathers it with cream cheese or transforms it into a noontime eat.

The barbecue bagel’s roast beef, cheddar, and onions are drenched in barbecue sauce, and bagel baristas unleash a hose of cooling mozzarella cheese atop hot pastrami and spicy mustard inside the Bricktown sandwich. Diners can cradle sandwich stackings with any flavor of bagel—including salt or cranberry-orange-walnut—or bread, such as rye, on which thousand-island dressing forms a spreadable base for the corned beef, swiss, and sauerkraut of a classic reuben sandwich.
