Pique palates with the asiago-spinach dip, made with artichoke hearts and jalapeño bacon ($7.25), a cup of tomato-basil bisque ($3.75) or a house salad, prepared with fresh lettuce and vegetables ($3.75). The ravioli red and white, stuffed with four cheeses and served with both marinara and alfredo sauce ($9.25), or the roasted rosemary chicken, cooked in a brick oven and served with fresh vegetables and jalapeño risotto ($12.50), both make for satisfying main events. Pizzas are constructed from artisanal dough that is made in-house daily, and the whole-milk cheese layered onto them is melted during a quick tenure in a brick oven. Out in the dining room, patrons can pair pastas and pan-seared tilapia with wines from California and Italy or cocktails infused with fruity flavors. In addition to eating good food, patrons at Oliveto are also fulfilling a good act: a portion of each sale is donated to the Tulsa Sooner Chapter of the Cystic Fibrosis Foundation.
