Sugarcane is grown right on the estate, situated on incredibly rich alluvial soil.

The annual harvest runs for 100 days straight from September to January.

The distillation uses a copper hybrid pot still followed by a second distillation in a stainless steel still, with a mentality of preserving as much of the natural flavor as possible.

They use Grade A molasses—a significant advantage over the Grade C (blackstrap) molasses used for most rum—which they are able to source because their primary production is raw sugar.
