A "paisan" is a friend, a family member, a cousin, a lover—sharing a meal with friends and/or loved ones is one of the great joys in life; that is what Paisan's is all about. Come and join the Paisan's family.
Do you use any family recipes at your restaurant? Whose family do they belong to (the chef, the owner, or someone else)?
Many of our recipes are either inspired by the owner's family (for example, the Italian meatloaf was a specialty of our owner's father) or have been slightly modified to work in a commercial kitchen (i.e.; the cheesecake was the owners grandmother's recipe—a crustless New York cheesecake with a hint of lemon. The meatballs were inspired by the family recipe as well as our hearty tomato gravy.
In your own words, how would you describe your menu?
We are updating our menu to offer more seasonal, local items—we call ourselves regional Italian, offering traditional hearty red sauces, as well as the cured meats and cheeses of the Northern region of Italy and lighter dishes and seafood features of the Mediterranean. We make our own dressings, sauces, stocks, soups, many of our pastas, as well as fantastic desserts. Our chefs use local farmers markets and NC products to inspire weekly specials and more. We also hold specialty events, on- or off-site catering, and holiday programs.
