There's really no excuse for leaving Papa Roux hungry. If you want more to eat, all you have to do is put up a card and a parade of Cajun sides—chili, bread pudding, corn bread, and chili—come out of the kitchen, ready to complement equally hearty entrees. Yet the real stars here are the po' boys: beasts built upon bread, tortillas, or even three-egg omelets, filled with both the traditional and unexpected, such as hand-breaded alligator or smoked sausage. And since Papa Roux likes to control the taste of everything at their restaurants, the team makes its own small batches of root beer, cherry vanilla cola, and chocolate soda, and ensures the water is extremely water flavored.
