An extensive list of rare and vintage wines makes for winsome pairings with platters from the varied menu, which sways with the dance of the seasons. Inaugurate the evening with first course fare like the assorted Wisconsin cheese plate adorned with fruits and spicy pecans ($10), which can segue finely into the hot house tomato salad ($8). A parade of proteins arrives at the third course; the tender char-grilled flat iron steak wields batons of baked herb fingerlings ($17), while the grilled double cut lamb chop showers adoring audiences with leek, mushroom, fennel, and Pecorino Romano risotto ($29). Friendly staff members and an inviting ambience populate the Parker's Bistro dining room, which resides in the historic Ballard Block Building. During renovations, the team worked to preserve the building's original brick, stone, warm colors, wood textures, and steam-powered Nordic-Track, an installation common in pre-War buildings.
