The gourmets at Taste transfer their knowledge to up to 24 pupils per class via eight varietals and a bevy of food pairings. Each 2-hour wine-and-tapas class takes students on a whirlwind tour of the wine-pairing process, covering the basics and solving the age-old dilemma of selecting the right dessert wine to serve at Keebler-elf dinner parties. Participants mingle and sip as knowledgeable instructors share the rich history of tapas, pass out recipes for featured dishes, and discuss how correct pairing practices help both the food and the wine taste their best. Participants are free to sample a blend of egg and tuna ensconced inside serrano ham, or construct tiny ships out of smoked-salmon slivers to slide into emptied bottles. Other included morsels that enhance and elucidate wine flavors include thyme-scented green olives, shrimp, and manchego cheese with quince paste. At Taste, the retail store for the storied Sand Castle Winery, rows of wooden racks display the winery's vintages alongside Di Bruno Bros. cheeses and gourmet oils and vinegars. Regular tastings and hands-on classes take place amid the store's marble countertops and vineyard-inspired artwork that is only detectable by oenophiles. During wine-pairing classes, students learn to coordinate nosh and nectar as experts present them with various combinations of wine and accenting fare, such as cheeses and fruits.
