Pikkas Peruvian Cuisine & Pisco Bar's owner and executive chef Joseph "Pepito" Aparicio opened his restaurant because he wanted to introduce Cherry Creek's citizens to his interpretation of Peruvian food. The chef, who has 25 years of culinary experience, fuses traditional Peruvian food with Japanese, African, Spanish, Italian, and Chinese techniques and flavors.
One of his creations, portobello ravioli, swirls buttery aji amarilla sauce over mushrooms, ricotta and parmesan cheese, and juicy shrimp. For a classic Peruvian dish, chef Aparicio whips up lomo saltado with chimichurri sauce or ceviche clasico—cubes of mahi mahi drizzled with freshly squeezed lime juice. He also has a few vegan dishes in his repertoire, including a grilled portobello ceviche.
Chef Aparicio pairs his food with an ample variety of beverages, including fine wine, Latin-American beers, and nine signature cocktails made from pisco, a Peruvian brandy produced by distilling grapes and liquid happiness.
