When Rick Allison layers already-overstuffed, Pittsburgh-style sandwiches with cheese, tomatoes, apple cider slaw, and fresh-cut fries, he's not just crafting crowd-pleasing chow—he's carrying on a family legacy. His grandmother used to own a restaurant in Oakmont, and as a child, Rick would watch her flip the burgers, sculpt the pastas, balance the books, and welcome customers. Once he grew up, he supplemented his penchant for the biz with a formal education at the Culinary Institute of America, then cut his teeth in esteemed kitchens before opening his own restaurants.
