What made the owner want to work with food? When did he first develop that passion?
Born in Long Island, Edward Sylvia has always been passionate for all things culinary. He decided against a promising athletic career and decided to pursue his passion in culinary arts. He attended the Arts Institute in New York and took an unpaid position at the famously obstreperous French restaurant, Bouley. He then went on to work at several high-profile restaurants including Aquavit, Petrossian, and the Millennium Hotel. Due to his frustrations with lavish kitchen spaces or poor culinary procedures and low expectations, he was driven to put his vision of food out there—food the way it is meant to be, created from scratch, using fresh, quality ingredients, and most importantly, affordable.
What’s the best reaction you’ve ever gotten from a customer?
One customer said eating our Italian Wedding slice was like a marriage of one person to one pizza for the rest of their life.
Is there anything else you want to add that we didn't cover?
The best foods we prepare are extremely fresh, simply seasoned and prepared in the most straightforward manner possible. Our food not only tastes better, but we maintain a smaller carbon footprint than others who use processed and mass-produced foods. All our dishes are served on our environmentally-friendly plates, bowls, and serving dishes which are made only from two products: fallen leaves and water.
In your own words, how would you describe your menu?
We are a Certified 3-Star Green Restaurant and we live it. Our craft pizzas, fresh pasta, and fresh tomato sauce are all made on-site with unbromated flour, fresh Herbs, and no cans or preservatives. A small tasting of Chef Edwards’s many unique specialty pizza options will make anyone a believer in using fresh, local ingredients.
