Pizza Fresh was born out of the idea that a fresh, home-cooked pizza should be simple and convenient. The staff piles cheese, sauce, and more than 20 toppings onto doughy disks that clients pick up, take home to meet the family, and then bake in their own kitchens. Classic pies include garlic-spinach pizza ($11.49 for a medium) and hawaiian pizza ($9.49 for a medium), while lighter pies yield 35% fewer calories and 30% less fat than the traditional pizzas. Creative types can design their own pizzas ($7.49+ for crust) with a smattering of sauce choices, such as classic, garlic, and tangy barbecue. Desserts such as cinnamon bread or cookie dough sate sweet teeth when they bake at home, and savory sides and salads balance the meal like a talented young gymnast on the uneven parallel bars.

Pizza Fresh’s kitchen is unusually cool for a pizza place. There is no heat radiating from an immense oven, no cheese bubbling over crusts, and no cooks wiping their brows on flour-dusted shirtsleeves. In their place stand more collected cooks busily chopping 24 fresh veggies and meats, ladling four different sauces, and pounding out slabs of dough for classic, light, or stuffed pizzas. They prep their pies the same as their oven-loving counterparts, but when it’s time to bake, Pizza Fresh’s crew seals up premade pizzas for customers to take home and bake in their own kitchens or atop their own car engines.
