Pizzeria del Mercato
The chef at Pizzeria del Mercato cooks all of his pizzas including margherita, quattro formaggi, prosciutto, and bianca in an 800- to 900-degree wood-burning oven for longer than a traditional Neapolitan-style pizza, using housemade dough as well as whole-mild mozzarella and ricotta. In goes dough, and out comes an all-around crunchier crust with no soggy spots. The chef further breaks with convention with his powdered-sugar-and-Nutella pizza, though he also keeps traditionalists happy with gelato and tiramisu.
