At Portland Prime, located adjacent to the Portland Downtown Embassy Suites, chefs pile plates with fresh Northwestern seafood and prime steaks, slide specialties into wood-fired ovens, and handcraft desserts in-house using locally sourced ingredients for a well-stocked menu. Engage appetites or girlfriends with house-cut sweet onion rings ($9), served with malted, caramelized onion ketchup, before swimming through the flavors of wild diver scallops ($27). Highly marbled steaks, aged a minimum of 28 days and hand-cut from USDA Prime beef, delight palates with tender juiciness in filet mignon ($39) form or as Prime baseball-cut top sirloin sporting a zinfandel juniper beurre rouge ($34).

The eatery’s expansive wine list, with 140 bottles and 40 wines by the glass, which helped it win the 2011 Wine Spectator Award of Excellence, anoints parched tongues with fermented grape juice from across the globe. Mixologists at the Prime Bar sling locally crafted draft beers and vintage cocktails such as the lemon drop ($9) to encourage guests to do the bunny hop while live jazz caresses ear drums on Wednesday through Saturday evenings.

Portland Prime's claim to fame is its steaks. Each highly marbled piece of USDA Prime beef is aged for 28 days before it’s cooked to achieve maximum flavorization. Wood-fired ovens sear the juices of diver scallops and ahi tuna steaks inside blackened crusts, and locally sourced ingredients enrich every dish, including seasonal desserts.
