The namesake dish of Pupuseria Lila's, the pupusa, is one of El Salvador's most traditional dishes. Chefs stuff thick corn tortillas with queso, then bake them into bites of chewy, melty deliciousness. Lila's variations include one with pork skin and beans, and another with loroco, an edible flower bud often found in Salvadoran cooking. Although they're certainly experts, chefs don't limit themselves to pupusas; their menu also includes Honduran baleadas at breakfast, and lunches of pork chops and carne asada. They even flex their culinary muscles at dinner, pairing chicken and ground beef with slices of banana slices and frying whole fish into crisp-but-tender entrees.
