Rania's Kabob Grill
It takes a long time to create the rich, spicy flavors for Rania's signature kabobs. Before the chefs ever place cuts of lamb, seafood, chicken, or beef onto skewers, they marinade them for 72 hours. Only then do they char the skewers over an open flame or their custom kabob grill until they're just crispy and slightly charred. The resulting savory, juicy morsels go perfectly with the restaurant's flaky pieces of naan, seasoned basmati rice, and other Afghan dishes.
Though the meat dishes here may take up a lot of the chefs' attention, that doesn't mean they don't give just as much thought to their vegetarian dishes. On any given day, they saute chunks of butternut squash with Mediterranean spices or enhance the flavor of spinach qorma with a medley of herbs and scallions. Each vegetarian dish also comes with a slice of naan or Kabuli-style rice rich in seasonings, carrot slices, and sweet raisins.
