- For $50, you get a one-hour private cheese tasting (a $100 value).
- For $17, you get a 20-minute group cheese tasting (a $35 value).
In his storeroom stocked with handmade cheeses, John Raymond employs his curd comprehension and milk mastery to educate tasters on the history, process, and complex flavors of a multitude of artisan cheeses. Group tastings introduce gruyere greenhorns to the cheese industry, giving an overview of the taste and textural differences among varieties. As many as 30 cheese enthusiasts may attend a group tasting with the freedom to try between six and nine types, and all are invited to bring their own bottles of wine for a perfect palate pairing.
Private tastings entertain a maximum of four participants, providing pupils with ample time to investigate the reasons behind feel and flavor contrasts as Raymond delves deep into the cheese-making process. Samplings are stretched to every corner of the shop, and wine is provided.
