It's easy to imagine him using the same tactics he later displayed as a fan favorite on Bravo's Top Chef: the gregarious smile, the hands in constant motion as he cooked or simply gestured to explain Italian cuisine's connections with France and Spain. Today's Reserve selection invites you and a guest to admire the confidence and charm of Chef Viviani's cooking with a three-course rustic game dinner. The dinner includes:

- Whole roasted herb encrusted rabbit with season market vegetables and roasted potatoes and herb, brown butter reduction
- Grilled wild boar tenderloin with season market vegetables and roasted potatoes and blueberry reduction
- Crostini appetizer for two
- Two glasses of Firenze red or white wine
- Two chef desserts
In his Toluca Lake kitchen, Chef Viviani plucks inspiration from time-tested Florentine recipes, some dating back to the 16th century. And fittingly enough, the Reserve experience seems designed to fill a Renaissance banquet hall as much as a glamorous modern dining room, with a handsome whole roasted rabbit or a portion of a grilled boar tenderloin holding down the center of the table. Before it arrives, diners share a serving of crostini di pancetta—a specialty of toasted bread topped with fresh, imported burrata cheese, grilled pancetta, crispy sage, and brown butter. For dessert, chefs surprise the pair with a duo of desserts, which might include flourless chocolate cake, vanilla crème brûlée, tiramisu, or housemade cannoli.
As befits the home base of a chef with the personality of an entertainer and an artistic eye displayed in towering, colorful plate presentations, Firenze Osteria's ambiance doesn't shy away from outright grandeur. Thick crimson drapes loop down from the ceiling, and chandeliers emerge from painted recesses to blossom with an explosion of delicate crystals grown from only the prettiest snowflakes.
