Timing is important in any kitchen, but the logistics behind even the most elegantly basic dish at Flyte Dining & Wine are enough to make one’s head spin. On the coast, independent fishermen haul in snapper, mussels, and scallops that are then flown from the docks and arrive at the restaurant the next morning. Today's Reserve selection invites you and a guest to savor ultra-fresh seafood—along with free-range meats and produce from dozens of boutique Tennessee farms—with a six-course tasting dinner. Though the menu changes constantly to adjust for the day’s bounty of fresh ingredients, guests can expect five savory dishes that show what the kitchen does best, capped off with a dessert handcrafted by pastry chef Tony Galzin.

Trained by the Culinary Institute of America and Le Cordon Bleu College of Culinary Arts, Flyte’s executive chef, Matthew Lackey, first picked up a feel for food in Castalian Springs, Tennessee. On his grandfather’s farm, Matt grew up feeding cattle, cultivating garden beds, and watching his grandmother cook. As an adult, he studied seed-bank farming and heirloom varietals to master the skills he now uses daily to nurture his Lick Creek Farm, one of many sources of the organic vegetables in Flyte’s dishes. Diners might see the local landscape reflected in pickled fennel adding snap to summer squash, charred peaches melding with grilled squid, or sweet corn folded into panna cotta.

Although today’s Reserve selection does not include alcohol, Flyte also pairs its morsels with an ever-changing wine list that earned an Award of Unique Distinction from Wine Enthusiast magazine. Lit softly by pendant lights, Flyte’s interior lets the natural world intrude in the form of plants spilling from nooks in the pumpkin-colored walls, outcroppings of rough brick, and support posts that mimic the form of sturdy saplings. The mix of warm local color and sleek organic forms creates a fusion of Western and Eastern design elements more seamless than that of a cowboy hat made of rice paper.
