Roux 38 Lounge
Roux. A classic ingredient in French cooking, one that gives sauces and stews substance and helps bind disparate ingredients into one harmonious dish. As such, it's the namesake of Roux 38, an eatery devoted to the wild, aromatic flavors of Cajun and creole cooking. The menu smacks of Nawlins right from the get-go, with appetizers of boudin balls and double-fried alligator. As their entree, guests can choose from dishes with very different flavor profiles. The chicken and waffle is sweetened with vintage Hennessey syrup, catfish is spiced up with Cajun-curry ketchup, and gumbo is bulked up with chicken, sausage, crayfish, shrimp, and crab in a 36-hour roux.
