That's why when they aren't in the kitchen, they spend their days developing relationships with New York's farmers and producers from the Hudson Valley Region. These partnerships help them develop farm-to-table cuisine (think local pork-shoulder meatballs with shiitake mushrooms and crispy polenta, or a New York strip steak rubbed with brown sugar and coriander) that's as sustainable as it is delicious. The chefs also rely upon locally sourced ingredients to whip up brunch, such as free-range eggs from Slingerland Family Farm.
