Roux applies a modern rotation to southern comfort fare, taking down-home staples and turning them into a complex culinary experience. Executive chef Randy Dunn centers the menu around small plates constructed from and flavored with local ingredients. The bistro meatloaf simultaneously honors and defies its namesake's history by bathing itself in red-onion marmalade and white cheddar ($15.95), and the ravioli convenes an unlikely caucus of blue cheese, organic spinach, artichokes, and roasted tomatoes ($15.95).

Lunchtime plates convey savory messages from the pressed chicken and brie sandwich, which crushes a stack of chicken, brie, spinach, and raspberry sauce on sourdough ($8.50). The grilled cheese deluxe, composed of white cheddar, gorgonzola, and granny-smith apples, joins forces with soup to satisfy noontime noshers ($5.95, $7.95 with bacon).
