As he said on WBRZ, "Louisiana cuisine, everything is about being simple. So we keep it as simple as possible." Deceptive simplicity doesn't mute the bold flavors of dishes such as the blackened Louisiana catfish po'boy on New Orleans-style french bread or the slow-braised pot roast, which simmers in a dark roux and arrives atop a helping of grits.
