Jared Leonard, Rub BBQ’s sage of smoking, fills minds and stomachs with his brand of barbecue by detailing every step from meat selection to menu planning during three-hour seminars. Cadres of 16 aspiring pit apprentices gather in Leonard’s newly added Pit Room, which features 1,000 square feet of kitchen equipment centered on a smoker. Classes cover an extensive spread of barbecuing technique and theory, describing the subtle differences in regional styles and practicing techniques to add flavor and seal in moisture while in the smoker. As meats spend time in the fire, participants whip up barbecue sauces and enough sides to make a four-course meal. Once the smoker has done its work, attendees savor the fruits and meats of their labor buffet-style, with brisket still piping hot from the oven ready to apply saucy smooch marks on contented cheeks.

In addition to full stomachs, students carry home three jars of Rub BBQ’s signature barbecue sauces and a miniature cookbook containing all dishes sampled during the evening. Attendees can bring their favorite beverages to enjoy with the meal, and the class syllabus includes wine and beer pairings that bring out flavors hidden in the meats or camouflaged as napkin stains.

Unlike many barbecue aficionados, pit master Jared Leonard focuses on creating the perfect dry rub rather than devoting all his efforts to sauces. A product of years of research and pleasant taste testing, his secret dry rub includes a blend of 14 seasonings designed to sit with the meat for 24 hours prior to being slowly smoked to perfection. The blend works its magic on all of Rub's Backcountry Smokehouse's meats, which include pulled pork, sliced brisket, and smoked ribs. The housemade sauces—smoky and sweet, citrus chipotle, and smoked jalapeño pepper—complement the dry-rubbed flavor and are served on the side so that patrons can use half for their meat and half to gel their mustaches. Patrons may also supplement their meals with made-from-scratch side dishes including truffle mac 'n' cheese and custard-filled corn bread.
