Rumba’s innovative blend of Latin and Caribbean cuisines, featured on Check, Please!, combines traditional culinary techniques with stylized fusion flavors. Amid authentic Moroccan lamps and décor evoking vintage Cuban glamour, dining tandems can build trust by tossing bites of poblano-chicken or chipotle black-bean soup into each other’s mouths. Salad courses entangle mangos, hearts of palm, and tomatoes in frilly mixed greens, splashing one with a mojito vinaigrette and dousing the other, Celsa’s fantasy, in honey-dijon dressing. Come entree time, the Churrasco Rumbero’s 8-ounce grilled beef tenderloin rides a garlicky wave of chimichurri onto asparagus-stalked shores accompanied by an entourage of mojo-slathered tostones and sun-dried tomatoes. Lime-seared sea bass veracruz simmers alongside sweet crab meat as an alternative main-course option, and rosemary-marinated pollo asado con limon—roast chicken with lime—calls thirdsies from its oven-shaped tanning bed. For dessert, coconut crème brûlée vies for sweetened supremacy, challenged by a brandy-laced bevy of brown-sugar-sautéed tropical fruits adorning a snowy dome of vanilla ice cream.

On Thursday night, the members of Rumba 351 don white dinner jackets and stride out onto a dramatically lit stage to perform classy Afro-Jazz from the ’40s and ’50s. Latin bands perform Thursday–Saturday, and dancing kicks off after 8 p.m.
