They may love to experiment, but the chefs let their ingredients do the talking by drawing their natural flavors to the forefront of the restaurant’s sophisticated Japanese dishes. Yellowtail tuna, for instance, is simply seared before it's plated with sliced radish and topped with ponzu sauce, whereas cucumber adds a slight crunch to the eel roll, and smelt masago sees caviar glistening on a simple bed of rice. Even the appetizers are smartly simple, with lightly smoked tuna tataki, steamed and salted edamame, and beef-wrapped asparagus kicking off meals.
