Saffron’s chefs add new melodies to the traditional riffs of Indian and Pakistani flavors by augmenting classic spices with more daring seasonal and organic ingredients. Guests can begin their meals with a shared appetizer of samosas, which encase their potatoes, green peas, and onions in a crisp pastry shell. After chefs baste tandoori chicken in yogurt, ginger, and herbs, a clay oven cooks the succulent gobbets until they’re as tender as a poet’s torn hamstring. Culinarians can also sizzle up chicken handi in a decadent buttercream sauce or fill bowls of ambrosial curry with morsels of goat or lamb. Otherwise the malai kofta—just 1 of 13 vegetarian options—simmers a veggie-loaded kebab in a hot gravy-like cream sauce loaded with herbs and spices, a strikingly similar concoction to the contents found in Colonel Sanders’s morning cup of coffee.

The delicate spice combinations that grace the dishes at Saffron Las Vegas have been perfected over thousands of years, which contrasts with the freshness of the ingredients from which the dishes are made. Chefs simmer lamb, goat, and chicken in signature rich, buttery sauces, full of saffron and curry. On Fridays and Saturdays, they offer Kosher and Halal meals available via buffet between 12 p.m. and 3 p.m.

The owners’ sense of presentation extends from their food to their décor, as they hand select every plate and saucer on which their food is presented.
