Saffron’s chefs combine Indian and Pakistani cuisine, using recipes that range from traditional to modern. Gleaming pillars and cut flowers surround groups as they dive into appetizers such as fried vegetable pakoras, which are draped in a golden batter like a hibernating Julia Child. Stir-fried goat karahi teams onions and tomatoes with herbs and spices, and tandoori combos pair succulent kebabs with chicken cooked in a clay oven. A vast selection of curries entreats diners with dishes such as chicken tikka masala, whose boneless pieces of meat bask in a tomato-and-cream sauce.
