The Saguaro cactus, a symbol of the American Southwest, only grows in a small part of the Sonoran Desert spanning the border between Arizona and Mexico. It is precisely this region that the chefs at Saguaro celebrate with their menu of Arizona-Mexican or "Az/Mex" cuisine. Among the flavor combinations are housemade saguaro sauce slathered atop braised pork chimichangas and grilled steak fajitas with house-made chipotle sauce. Chefs use soft corn or flour tortillas to hold a variety of eclectic ingredients, including tempura battered vegetables, seared white fish with spicy slaw, and crispy pork topped with queso fresco and watemelon. Even the weekend brunch menu blends flavors from both cultures in dishes such as buttermilk corn pancakes or the egg and chorizo sandwich. The popular Saguaro hash combines chipotle chicken, potatoes, pepper, onions, fried eggs, and sour cream.
