Their daring feats of culinary gymnastics, performed while they grill teppanyaki feasts from ingredients such as scallops, chicken, and filet mignon, entertain diners seated at attached tables or hanging from the neon-lit ceiling for better views. Libations from the extensive sake menu sail to tables or seats along the sushi bar, behind which cuts of fresh seafood tumble into beds of vinegared rice to form more than 20 signature sushi rolls.
