Building on an idea that first fruited in the Burgundy and Bordeaux regions of France, Mountain View Vintners became one of California’s first négociant wineries—its winemakers concocting vintages by curating, blending, and aging a harvest of grapes from rigorously vetted vineyards. During each two-hour spirit-sampling symposium, a practiced oenophile pours local wines as discerning duos and dulcet barbershop quartets sniff, swirl, and unwind in a cozy room just large enough for 18 sippers or three California Raisins cover bands.

Post sampling, informed olfactory senses commemorate their tasting with one of three bottles of the winery’s robust vino. The 2009 Monterey Pinot Noir blends ripe berry, cherry, and plum flavors with a lingering oak aftertaste, and the Lake County sauvignon blanc plumbs the flavorful depths of green-skinned grapes. In a bottle of 2006 Napa Valley cabernet sauvignon, earthy spices and black currant overtones warm the vintage with a hug straight from Mother Earth. All three kinds of wines promise to please if opened immediately but, unlike petulant genies, also mature nicely in the bottle.
