For dinner, the menu includes servings of shrimp, scallops, and squid in a basil-coconut cream sauce ($29) and yellow Thai curry with free-range chicken ($23). The lunch selection includes pork tenderloin with a ginger-sake sauce ($16) and an organic salmon fillet with lemon, garlic, and white wine ($19).
Inside Santé Restaurant, the piquant scents of globally inspired cuisine mingle amid the work of local artists, whose pieces fill the dining room's walls. Chef Daniel Guerra demonstrates his own artistic skills, plating beautiful dishes that use a palette of organic produce and locally-sourced meats. He has experience working in several Michelin-star restaurants in Italy, and takes his inspiration from chef Massimo Bottura at Italy’s renowned Osteria Francescana Restaurant, which has three Michelin stars. Chef Daniel's modern and fresh cuisine and delicately balanced six-course feasts reflect a new generation of Italian chefs. To accompany chef Daniel’s fragrantly seasoned dishes, Santé stocks its subterranean vault with a selection of Canadian and international wines, carefully selected by sommelier Rob Neillis. The intimate space, inventive cuisine, and curated wine list earned the eatery Diners' Choice awards from OpenTable for Best Ambiance, Romantic, and Fit for Foodies. On Wednesdays after 8 p.m., they offer live jazz music, and Fridays are "Vinyl Fridays," which feature a local DJ playing classic hits off vinyl records.
