When it opened in 2010, Sauceman's was a hole in the wall serving up Lexington-style barbecue. After undergoing an expansion and remodel in 2017, the menu remains just as mouthwatering but the surrounds have a bit more pizzazz—mainly in the provenance of its wood. Out back on the patio, there are piles of local hickory, oak, and pecan wood for smoking; inside, there's a bar top derived from a tobacco barn and a centerpiece live-edge tabletop cut from a magnolia that lived many years in front of the courthouse in Uptown Charlotte.
The main event, however, is still the pork. It's slow-smoked for at least 12 hours over regional woods that give it a distinct Piedmont flavor, and it comes in forms like chopped or coarse (on a bun or plate), ribs, and sausage. Sauceman's also crafts barbecue chicken and melt-in-your-mouth brisket, as well as a raft of traditional sides and desserts. Among the most notable are the sweet sugar biscuits and the tangy, mayo-free red slaw, made with the sweet-and-sour sauce that's a staple of Lexington BBQ.
