Seikami's head chef, Angel Mendoza, elevates the art of sushi into a sculptural spectacle. He and his staff fill decorative boats with rolls, arrange plates of sashimi in color-coordinated stripes, and even create "sushi cakes" to feed catered crowds, wherein they pile hundreds of rolls into a multi-tiered work of art.
