Since 2010, Seven Birches Winery has been harnessing the bountiful fruit of New Hampshire into bottles worth boasting about. It sources it fruits—like blueberries and apples—from its farm in North Haverhill, New Hampshire, just hours before starting the fermentation process. For its grape wines, it imports bushels from renowned vineyards from around the world, forging Johannesburg grapes into crisp Rieslings and Californian spoils into robust Syrahs.
- 2017 Blueberry Wine: red in color, an instant flash of warm fruit near in resemblance to grape tones; blueberry aromas precede pepper and spice for an off-dry drink
- 2017 Tempranillo: dark grapes from California bloom into drafts of bright strawberry and mature cherry and fig; stamped with whispers of oak and cedar before flourishing into a sweet crescendo of chocolate and coconut
- 2018 Wild: untamed; five grapes blended then left untouched in its fermenting and barreling processes, left to to the imagination of native yeast, producing a dry, sweet juice
