Although Michael Waters acts as Silo's consulting chef, his beginnings were much more humble. His first job was at Jean-Louis Palladin's restaurant in The Watergate, where, after a stint washing dishes and removing wiretaps from the dining room, Palladin quickly moved him up to grill cook. His skills eventually led him to the kitchens of other renowned D.C. chefs, including Michel Richard and Roberto Donna.
Today, along with owner Reza Akhavan, Waters brings his culinary expertise to Silo, which has been transformed into a modern American bistro. The menu reflects this change with hearty dishes touched by a dash of elegance, from a crab-cake sandwich with jalapeno mayo and arugula to grilled new york strips and braised short ribs.
