With experience working alongside acclaimed chefs Sara Moulton and Ted Allen, Chef Myrna Kallergis draws on her extensive culinary training to teach students how to execute decadent meals and lavish gatherings. In each specialized two-hour class, gourmet greenhorns separate into individual groups, converging around tables of gleaming equipment and fresh ingredients to create up to two recipes from scratch. As dishes come to fruition, chef Kallergis tours the room, dispensing personalized tips, accommodating her students' varying degrees of kitchen experience by adjusting chopping techniques, tweaking sautéing strategies, and altering harmonies in bread-rising lullabies. Classes culminate with a tasting of the group's collective creations.
Kitchen warriors can choose from a variety of themed classes, exploring the flavors of the Mediterranean in Greek Isle Cooking or testing the batteries on the tongue's naturally occurring smoke detectors in the Iron Chef Chili Cook-Off. Dinner Party 101 and the Halloween Costume & Cocktail Party each show scholarly socialites the ins and outs of party planning, menu selection, and space decoration with a wealth of shindig-friendly recipes. Students create inventive dressings with cornbread and ciabatta in the Thanksgiving Sides & Stuffings course, and the Knife Skills & Cooking Basics class helps prepare pupils for the slicing and steaming sections of the SAT.
In her hands-on cooking classes, Chef Myrna Kallergis imbues students with some of the culinary expertise that has landed her gigs at the Austin Wine & Music Festival and working with Food Network's Ted Allen. At weekly customized sessions, she and occasional guests chefs–such as 2007 James Beard Award nominee Monica Pope–teach pupils how to make burgers, gourmet pizzas, and tarts from scratch. She also instructs youngsters on cooking fundamentals at summer camps, where kids enjoy light, nutritious lunches in between lessons built around themes such as food from around the world. Along with teaching, Chef Myrna helps guests improve their eating habits with calorie-counted, portioned, and packaged meal plans designed around specific wellness goals. Her venue is also designed to host small private events.
