Like the Bushwick community around it, Skytown is a study in juxtaposition. Chefs specialize in comfort food, but they make it with inventive recipes and upscale ingredients—think root beer ribs, pork shoulder with kale, and free range turkey burgers. Bartenders are highly-trained mixologists with a shared penchant for vintage obscurity, but they pour into unfussy jars.
The physical space is likewise a study in contrasts. Exposed brick, reclaimed wood panels, and a black, textured ceiling come across as both rustic and chic, like a lumberjack with a pillbox hat. There are hidden credit card strips beneath the bar for easy ordering, but there's also a quaint pop-up book and zine store—the Book Nook—manned by community members.
Even Skytown's press resembles a collage more than an organized catalogue—the restaurant has earned praise from Brooklyn Magazine, retweets from Judd Apatow, and befuddled reviews from some who just don't get it.
