Hi Norm, Congratulations on the new outside kitchen! We cover grilling/barbequing in-depth. We teach different types of grills, how to control you heat on the grill, different ingredients that are suitable for a grilling/ barbequing, and 100's of resources reinforcing what we teach in our Grilling section. We also feature an "Ask a Chef" area to our members. If you have any questions about recipes, measurements, ingredients, or Smart Kitchen in general, a Chef/staff member will have an answer for you in a timely manner. I went ahead and gave you a link to our free resource covering Barbequing. http://www.smartkitchen.com/resources/barbecue Smart Kitchen is a great place for beginners. We have a curriculum going from basic easiest concepts to more complicated concepts. We start with proper hand washing and setting up your work station and then get into some Knife handling basics. For example, from Log Cuts (Julienne, Parmentier) to Cube Cuts (Dices) in beginner, we build upon those exercises in intermediate and do rough chopping and Mincing and Puree, etc. Smart Kitchen takes the same approach with each of our lesson categories like Knife Skills, Food Preparation, Cooking Methods, Breakfast, Garde Manger (cold dishes), Proteins, Sauces. For another example in Beginner Cooking Methods we talk about cooking with dry heat (and explain dry heat vs. moist heat) like grilling, saute, pan fry etc and teach some moist heat methods like blanche, simmer, etc. In intermediate Cooking methods we use some of those techniques in new combinations to teach braising and stewing etc. Our whole system is progressive (meaning we teach the first things first and the second things second.) hi my name is tru im 54yrs old . can these lessons be downloaded and saved on DVD for for future reference and reviews .my occupation is a tractor /trailer mechanic and a Harley Davidson technician and no mater how many times i do a job i still find it helpful to sometimes review the job before doing it, some procedures are very similar .my mom was a sous-chef and i did grow up in the kitchen but i still read her recipes before building them from what i see so far i really like your online classes they will fit into my work schedule,thank you redwing trudogg ( tru )

Hi Tru, We agree with you about the benefits of having all of the instruction "on tap" and available for a quick refresher. Our business model is a subscription model (very low priced) so the Smart Kitchen videos should not be available for download and saving to a DVD. Instead, everything should be always available on a computer or smart phone 24/7 with the above mentioned low priced, $9.99 / mo. membership. Once your Groupon price expires in 6 months or a year you are able to continue with us at the then current membership price. I hope this helps and we look forward to working with you in the kitchen. HI Marcia, Smart Kitchen is officially for adults over 18 because of the use of dangerous forces (knives, heat, acids, food safety). Smart Kitchen is also not a "recipe" site though we have some recipes. We are more about teaching techniques some of which are applicable to vegetables alone or to both vegetables and meat. We do have exercises that are applicable to vegetables such as Grilling Sturdy Vegetables, Grilling Delicate Vegetables, Roasting Vegetables, and many many more but they are not organized as Carnivore or vegetarian. They are organized as they are needed to learn to cook, from simplest most basic concepts to more complicated compound techniques. I hope this helps answer your question. P Chef Smart Kitchen

Hi Karen, We have a pretty extensive section on meat and proteins. You will be taught how chefs are taught to think about meats. The focus is currently on Meat with a vegetarian protein section on the way and a very extensive chicken protein section on the way as well.

Hi Betty, Smart Kitchen is a cooking school that emulates Culinary School and teaches mostly concepts and techniques. Think the difference between Glaze, De-Glaze and Demi-Glace and how and when to use each technique and that may help explain more about Smart Kitchen. We do frequently spell out when something can be made healthier but healthier cooking is not our focus. We do not yet have lessons on "Cuisines," but it is something we are planning to add.
