Congratulations on the new outside kitchen! We cover grilling/barbequing in-depth. Smart Kitchen is a great place for beginners. We have a curriculum going from basic easiest concepts to more complicated concepts. We start with proper hand washing and setting up your work station and then get into some Knife handling basics. For example, from Log Cuts (Julienne, Parmentier) to Cube Cuts (Dices) in beginner, we build upon those exercises in intermediate and do rough chopping and Mincing and Puree, etc. Smart Kitchen takes the same approach with each of our lesson categories like Knife Skills, Food Preparation, Cooking Methods, Breakfast, Garde Manger (cold dishes), Proteins, Sauces. For another example in Beginner Cooking Methods we talk about cooking with dry heat (and explain dry heat vs. moist heat) like grilling, saute, pan fry etc and teach some moist heat methods like blanche, simmer, etc. In intermediate Cooking methods we use some of those techniques in new combinations to teach braising and stewing etc. Our whole system is progressive (meaning we teach the first things first and the second things second.) It is really designed for a beginner to understand both the concepts, the techniques and when each one is useful.
