Guests sample what Forbes calls "the best spirit you've (probably) never tasted", as a tour guide regales them with the drink's storied history, anecdotes about famous bootleggers, and insights into the brewing process. For the second option, guests take home a souvenir clay shochu cup made by a Lummi Island artist.

Sodo Spirits Distillery

Shochu, a calorically-light grain alcohol popular for hundreds of years in Japan, isn't very well known in the states. Sodo Spirits Distillery aims to change that. The distillery ferments Shochu in small batches, the way it was done in Japan back in the 1600s, with one small exception—Sodo handcrafts their version of "Japanese Moonshine" from local ingredients. Distillers combine pearled Barley from Washington's eastern fields with Koji fungus—the key traditional ingredient—to create the alcohol's signature flavor. Then, they dress up the mixture with field grown herbs and spices, such as fresh spearmint and fresh ginger. With a clear color and smooth finish, it makes an ideal mixer in fruity drinks or the ideal filling for the Hemingway Society's office water cooler.
