Some time ago, Ann Costlow took a leave of absence from her career in finance to work as a galley cook on board a ship—and she has never looked back. Inspired by her experience on the water, she decided to start her own business, albeit on dry land. Having spent some time in France, she thought, Why not crepes?

Costlow opened her first shop in a tiny space in the theater district and named it after her dog, Sofi. Today, the business has spread to five separate locations peppered across Maryland. At each, Costlow and company fill, fold, and wrap by hand their sweet and savory creations—some packed with bacon, others with chocolate—to sit-down diners and on-the-move munchers alike. They've earned plenty of positive publicity along the way, including from a number of celebrity visitors.
