While studying cooking in Italy, chef Matthew Stanczak found inspiration for Stanziato's Wood Fired Pizza and his menu of crispy-thin pies reviewed by the New York Times and named one of the best pizzas in the United States by Popular Plates magazine. Selections shift with the shades of trees to showcase the best seasonal, locally grown, and organic ingredients. Patrons averse to tomato sauce after former lives as mediocre Vaudeville acts savor white pizzas such as El Diablo, exorcising demons with lime-marinated shrimp, mozzarella, garlic, and red pepper flakes on a cilantro pesto stage ($16.95). Dueling parmigiano and mozzarella cheeses face off on the meatball pizza, buffeting taste buds with meatballs and basil strewn across a battlefield of homemade tomato sauce ($11.95).
