Somewhere within State Street Brats' traditional wood booths, along its walls of legendary Wisconsin memorabilia, and in the succulent center of every fire-grilled brat, the spirit of Madison is lurking, biding its time before emerging to dance on tabletops during the Badgers' next big victory. Start your tour of the menu with golden fried cheese curds ($6) or a platter of Bo's Nachos, which are layered in cheese, tomatoes, black beans, jalapeños, and sour cream ($5.50). Once your warm-up is complete, ponder personality differences between a white brat and a red brat ($4 for sandwich, $5.75 for basket). A white brat is a traditional brat: he douses himself in beer and dons onion chaps before jumping on the grill to ride the coals to freedom. A red brat is a dark, moody brat, a Madison alum favorite since 1936. State Street Brats also offers sandwiches, burgers, wings, salads, flatbread pizzas, and blurred memories.
