It'd be tempting to call the 12-foot oven, which was hand-built using stone masonry, the star of the show at Stick and Stone Brick Oven Bakery. Heck, it's even in the name. The real spotlight stealer, though, is the lineup of breads and sweet goods that come out of their wood-fired brick oven. That's because owners Sarah and David Bryan fold their passion for baking and their love of their customers into each batch, making a variety of loaves, including French brioche and 9-grain, as well as sweet goods ranging from cookies to pecan sticky buns. They even whip up their very own pizza dough, which home chefs can take home and bake themselves.
As if baking everything the old-fashioned way in a stone oven wasn't enough to set this family-owned operation apart, the bakers here also naturally leaven all of their breads. This means they let the dough ferment for about 18 hours in the fridge to lend the final product a rich, dimensional flavor. And for those looking to drastically reduce their exposure to gluten, this process ensures that the bread's enzymes gobble up much of the gluten during fermentation.
