At Taja Indian, chefs mine the past for more than traditional recipes. They also borrow a time-tested way of sourcing ingredients, reaching back through the years to gather produce and meat that's as natural as the food our ancestors ate. The chicken and lamb are free of hormones and antibiotics, and the lamb has been grass-fed, while the organic tofu, paneer, and basmati rice are non-GMO. Many entrees are vegetarian and gluten-free, and there's a full vegan menu for those with exclusively botanical appetites.
