The tacos and quesadillas that come out of the kitchen at Tandoory Taco may look traditional, but the flavors are anything but. That's because chefs have reinvented the traditional recipes to include an array of Indian spices and sauces. They char tortillas in their tandoor oven, and then top the flaky rounds with fresh cuts of cheese in an Agra tikka sauce, spicy chilli chicken, or fried calamari in a Baja chipotle sauce. Even side dishes get an Indian infusion, with chefs blending Indian spices into the queso, cooking tikka quesadillas in the tandoor oven, and sculpting rice into an exact replica of the Bay of Bengal coast. But the chefs also prepare traditional Indian recipes, including a range of Indian lamb, chicken, and vegetarian entrees.
