For $40, you get one general-admission ticket to a three-course dinner prepared by Chef Gaytan near the southwest corner of Buckingham Fountain Plaza on Wednesday, July 11, at 6:30 p.m. (seating begins at 5:30 p.m.). A vegetarian entree option is available. The dinner includes the following:

First course

Salad

Red wine poached beets, watercress, pumpkin seed crusted goat cheese, poblano and horseradish vinaigrette

Second course

Hibiscus flower braised short ribs, chipotle celery root slaw, orange and radish salad

In addition to the Taste of Chicago’s annual cavalcade of local cuisine, the 2012 festival introduces a five-day series of exclusive meals prepared by iconic Chicago chefs and served with the assistance of the Washburne Culinary Institute. Tickets to the first-ever Celebrity Chef du Jour are only available through Groupon. Wednesday's event shines a spotlight on Chef Carlos Gaytan, who strives to recapture the culinary and cultural mélange created by the French occupation of Mexico in the 1860s. He creates refined dishes that retain their distinctly Latin roots by using classic French techniques to elevate common ingredients into the realm of haute cuisine. Mexique, Gaytan's outpost in Noble Square, has been called one of the Best Mexican Restaurants in Chicago by Chicago magazine in 2010 and earned a Bib Gourmand rating from the Michelin Guide in 2011 and 2012.

During the Celebrity Chef du Jour dinner, attendees will gather in an air-conditioned tent at the southwest corner of Buckingham Fountain Plaza and sample three courses prepared by Chef Gaytan that exemplify his felicity with French-Mexican fusion. The event also includes time to mingle with the chef and ask for his thoughts on your own culinary experiments, such as eating pancakes for dinner or raising waterfowl in the attic.
