The instructors at Taste, the gourmet retail extension of Sand Castle Winery, imbibe visitors with a lesson in food-and-wine pairing. From behind an inconspicuous disguise of a trench coat and sunglasses, participants follow a bottle from first grape to last sip, gleaning an understanding of the process of making wine and how to best store it and serve it with food. Aside from the selection of Sand Castle wines harvested entirely from vinifera grapes, the pairings introduce palates to Di Bruno Bros. cheeses and gourmet foods. Students learn how to accurately pair nosh and nectar, instead of letting them choose each other based on their taste in Russian novels.


At Taste, the retail store for the storied Sand Castle Winery, rows of wooden racks display the winery's vintages alongside Di Bruno Bros. cheeses and gourmet oils and vinegars. Regular tastings and hands-on classes take place amid the store's marble countertops and vineyard-inspired artwork that is only detectable by oenophiles. During wine-pairing classes, students learn to coordinate nosh and nectar as experts present them with various combinations of wine and accenting fare, such as cheeses and fruits.
