To make Taz Indian Restaurant’s popular dish, tandoori chicken, the chefs first marinate the meat in a blend of yogurt and herbs and spices, including ginger and garlic. Then they place the fragrant chicken into a traditional clay oven to cook. The oven—a staple of Indian kitchens—also cooks the naan and roti bread used to scoop up bites of spiced lentils and lamb curry. Other classic meals include shrimp biryani and spicy salmon vindaloo.
