At Terra, Chef Kai Autenrieth's hands aren't just callused from years of cooking everywhere from Australia to Tanzania, but also because he does his own weeding in the vegetable and herb garden out back. This is just one example of his attention to detail that's won his food—seasonal New Mexican cuisine—praise from local and national press. Read on to learn more:

Insider's Tips

  • The dress code is smart casual.
  • Much of the menu can be prepared gluten-free.

The Chef's Table

The chef is very hands-on at Terra, and that includes instructing his guests in the kitchen. Those who book the Chef's Table begin the meal with drinks and appetizers at the garden behind the restaurant. Then up to 10 guests help prepare courses such as summer-squash soup and homemade fettuccine, and they'll need to work up an appetite, because eight courses are served. Chef Autenrieth also arranges getaways with guests to the Santa Fe Farmers Market, where they buy ingredients for the meal they'll prepare together.

  • "Terra Restaurant at the Four Seasons Rancho Encantado enchants guests with panoramic views and artful twists on Southwestern cuisine." — Tourism Santa Fe
